Our chocolate covered confections are freshly panned using local ingredients and our premium 70% cacao dark chocolate. Timing is everything and we've got it perfected thanks to Erik Gura, owner of Pie In The Sky in Woods Hole (that great bakery & cafe up the hill from the Steamship). He roasts these organic single origin Costa Rican coffee beans to the perfect darkness to compliment our 70% cacao dark chocolate. We then cover the beans in chocolate within 12 hours (no sooner- as the gases from the roasting process must be allowed to escape) capturing their fresh roasted flavor and fragrance. The chocolate is blended with Martha's Vineyard Sea Salt to add a layered depth and authentic "by the sea" flavor.
