This 45% dark chocolate bar with cinnamon is from the oldest producer of chocolate in Modica, Sicily -- Antica Dolceria Bonajuto, which was founded in 1880. Bonajuto makes its chocolates in the old style used by the Aztecs that was brought over to the new world. Ground raw cocoa beans are mixed with sugar crystals and orange zest at very low heat, then the mixture is pressed into bar-shaped pans to cool. This simple process preserves the natural cocoa butter, minerals and antioxidants, and results in a very robust cocoa flavor. Because there are no binding agents used, the chocolate is somewhat crumbly in texture, and the sugar crystals pop in your mouth as they melt. The cocoa in this bar is enhanced with a touch of cinnamon. No soy lethicin or other smoothers are used -- the ingredients are sugar, cocoa mass and cinnamon (so it's also vegan).
